Lahsun ki chutney, a spicy and flavorful Indian condiment, is a perfect addition to almost every traditional meal. Known for its bold garlic flavor and vibrant red color, this chutney can instantly elevate the taste of any dish â whether itâs rotis, parathas, dal-rice, or snacks like samosas and pakoras. Hereâs a simple way to prepare it at home.
Ingredients:
â 15â20 garlic cloves
â 6â8 dried red chilies (adjust as per spice preference)
â 2 tablespoons of lemon juice or tamarind pulp
â 2 tablespoons of oil (preferably mustard oil)
â Salt to taste
â 2â3 tablespoons of water
Method:
1. First, soak the dried red chilies in hot water for 10â15 minutes to soften them. This helps achieve a smoother chutney texture.
2. Peel the garlic cloves and keep them aside.
3. In a blender, add soaked red chilies, garlic cloves, salt, and a bit of water. Grind it to a smooth paste.
4. Heat mustard oil in a pan until it starts to smoke slightly, then turn off the flame and let it cool for a minute.
5. Add the ground paste to the oil and sauté for 2â3 minutes on low flame until the raw smell disappears.
6. Switch off the flame and let it cool. Finally, add lemon juice or tamarind pulp and mix well.
Your lahsun ki chutney is ready. Store it in an airtight jar in the refrigerator; it stays fresh for up to a week. This chutney is not only delicious but also helps in improving digestion and boosting immunity due to the medicinal properties of garlic.
